Turkish Bread (Ramazan Pidesi)

Turkish Ramadan Bread

Ingredients

  • 750g flour
  • 2 cups lukewarm water
  • 2 tbsp olive oil
  • 3 tsp baker’s yeast
  • 1 tsp nigella seeds
  • 1 tsp sesame seeds
  • 1 tsp sugar
  • 1 tsp salt

Directions

  1. Combine yeast, water and sugar. Use a spoon to stir until combined, then add olive oil and stir again. Let sit for 10 minutes.
  2. In a large bowl, combine flour and salt. Make a well in the centre, then add the yeast/water/sugar mixture. Use hands to mix it into a thick dough.
  3. Turn the dough onto a floured surface and knead for 15 minutes until it becomes smooth and elastic. (if you are using a stand mixer, knead the dough for about 10 minutes) .

  4. Transfer the dough to a warm place, cover it with a clean cloth and let it rise for ½-1 hours.
  5. Turn the dough onto a floured surface and divide it into two pieces, then place each half on a round baking tray sprinkled with flour and try to flatten it with hands. With fingers decorate the top of the dough, cover it and set aside in a warm place for 10 minutes.
  6. Brush the top of each pide with milk (you can use the mixture of egg yolk and milk), and sprinkle with seeds.
  7. Bake in a preheated oven to 450°F/230°C for about 10-15 minutes until it becomes golden brown.
