Turkish Ramadan Bread
Ingredients
- 750g flour
- 2 cups lukewarm water
- 2 tbsp olive oil
- 3 tsp baker’s yeast
- 1 tsp nigella seeds
- 1 tsp sesame seeds
- 1 tsp sugar
- 1 tsp salt
Directions
- Combine yeast, water and sugar. Use a spoon to stir until combined, then add olive oil and stir again. Let sit for 10 minutes.
- In a large bowl, combine flour and salt. Make a well in the centre, then add the yeast/water/sugar mixture. Use hands to mix it into a thick dough.

Turn the dough onto a floured surface and knead for 15 minutes until it becomes smooth and elastic. (if you are using a stand mixer, knead the dough for about 10 minutes) .
- Transfer the dough to a warm place, cover it with a clean cloth and let it rise for ½-1 hours.
- Turn the dough onto a floured surface and divide it into two pieces, then place each half on a round baking tray sprinkled with flour and try to flatten it with hands. With fingers decorate the top of the dough, cover it and set aside in a warm place for 10 minutes.
- Brush the top of each pide with milk (you can use the mixture of egg yolk and milk), and sprinkle with seeds.
- Bake in a preheated oven to 450°F/230°C for about 10-15 minutes until it becomes golden brown.
