Ingredients
Use the cup of yogurt as measure
- 3 eggs
- 1 1/2 cups sugar
- Zest from 1 lemon
- 1/2 cup melted butter
- 1/2 cup vegetable oil
- 1 cup yogurt
- 1 baking powder
- 3 cups flour
Directions
- Preheat the oven to 180 degrees centigrade and place paper liners in cupcake pan.
- In a mixing bowl, beat the eggs with sugar and zest of lemon, until the mixture is light and fluffy.
- Add the butter, the oil and yogurt to the mixture and mix throughly.
- Add the baking powder and flour then stir until all ingredients are mixed well. The batter will be very thick.
- Spoon batter into cupcake liners, then sprinkle with sugar over the top.
- Bake in the middle of the oven for 15–20 minutes ( depending the oven ) until golden.
- Remove from oven and allow to cool.
