Ingredients

Use the cup of yogurt as measure

  • 3 eggs
  • 1 1/2 cups sugar
  • Zest from 1 lemon
  • 1/2 cup melted butter
  • 1/2 cup vegetable oil
  • 1 cup yogurt
  • 1 baking powder
  • 3 cups flour

Directions

  1. Preheat the oven to 180 degrees centigrade and place paper liners in cupcake pan.
  2. In a mixing bowl, beat the eggs with sugar and zest of lemon, until the mixture is light and fluffy.
  3. Add the butter, the oil and yogurt to the mixture and mix throughly.
  4. Add the baking powder and flour then stir until all ingredients are mixed well. The batter will be very thick.
  5. Spoon batter into cupcake liners, then sprinkle with sugar over the top.
  6. Bake in the middle of the oven for 1520 minutes ( depending the oven ) until golden.
  7. Remove from oven and allow to cool.
