Lemon Oreo Parfait

Ingredients

  • 375 ml milk
  • 3 tbsp sugar
  • 3 tbsp cornflour
  • 4 tbsp lemon juice
  • 1 tsp lemon zest
  • 3 tbsp butter
  • 200 gr oreo cookies

Directions

  1. Combine milk, sugar, cornflour and zest in a saucepan. Place over low heat and stir constantly until thick and clear.
  2. Remove from heat, add lemon juice and butter and stir. Allow to cool.
  3. Crush the oreo cookies into crumbles.
  4. To assemble the parfaits, Use a pastry bag (or just a spoon) and add layers of the cream and crushed cookies in glasses, and finally garnish with cookie crumbles on top.
  5. Let parfaits in the fridge for 2-3 hours before serving.
