Lemon Oreo Parfait
Ingredients
- 375 ml milk
- 3 tbsp sugar
- 3 tbsp cornflour
- 4 tbsp lemon juice
- 1 tsp lemon zest
- 3 tbsp butter
- 200 gr oreo cookies
Directions
- Combine milk, sugar, cornflour and zest in a saucepan. Place over low heat and stir constantly until thick and clear.
- Remove from heat, add lemon juice and butter and stir. Allow to cool.
- Crush the oreo cookies into crumbles.
- To assemble the parfaits, Use a pastry bag (or just a spoon) and add layers of the cream and crushed cookies in glasses, and finally garnish with cookie crumbles on top.
- Let parfaits in the fridge for 2-3 hours before serving.
