Lemon cakes

Ingredients

  • eggs
  • 3 tbsp melted butter (40g)
  • 3 tbsp sugar (65g)
  • 6 tbsp flour (60g)
  • 1 tbsp lemon zest
  • 40 ml lemon juice
  • 1 tsp baking powder
  • Powdered sugar to garnish

Directions

  1. Preheat the oven to 180ºC.
  2. Separate the egg whites from yolks.
  3. In a bowl, beat the egg yolks and sugar together with an electric mixer until light and fluffy. Add butter, lemon zest and lemon juice, and whisk again. Then add flour and baking powder, beat until just combined.
  4. In another bowl, whisk the egg whites with a pinch of salt until stiff, and use a large spatula to fold them gently to the mixture (2).
  5. Fill the silicone mold with batter and bake at 180°C for 15-20 minutes.
  6. Let cool, then sprinkle with icing sugar.
