The Softest glazed shortbread Cookies
Ingredients
- 250g butter, softened
- 60g vanilla flan
- 1 egg yolk
- Pinch of salt
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1 tbsp cornstarch
- Flour
- Apricot jam

Directions
- Preheat the oven to 170°C / 325°F
- In a large bowl, cream butter and flan. Add the egg yolk and continue to beat until well combined.
- Add vanilla extract, cornstarch then sift and add flour, baking powder and salt and mix until you get a smooth and soft dough.
- Roll out the dough using a rolling pin to about 1 cm thickness. Use your desired cookie cutters to form cookies ( I used a round cookie cutter ).
- Bake for 10-15 minutes (do not brown). Allow to cool 1-2 minutes on the baking sheet then transfer to a cooling rack to cool completely.
- Spread each cookie bottom with jam and top with second cookie, bottom side down. Glaze cookies by spooning glaze over the top and decorate with chocolate.
