The Softest glazed shortbread Cookies

  1. Preheat the oven to 170°C / 325°F
  2. In a large bowl, cream butter and flan. Add the egg yolk and continue to beat until well combined.
  3. Add vanilla extract, cornstarch then sift and add flour, baking powder and salt and mix until you get a smooth and soft dough.
  4. Roll out the dough using a rolling pin to about 1 cm thickness. Use your desired cookie cutters to form cookies ( I used a round cookie cutter ).
  5. Bake for 10-15 minutes (do not brown). Allow to cool 1-2 minutes on the baking sheet then transfer to a cooling rack to cool completely.
  6. Spread each cookie bottom with jam and top with second cookie, bottom side down. Glaze cookies by spooning glaze over the top and decorate with chocolate.
