Stuffed Squid
Ingredients
- 4 squid
To make the sauce:
- 3 tbsp oil
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp parsley, chopped
- 1 bay leaf
- 200g tomato puree
- Origano
- Curry
- Basil
- Red pepper
- Black pepper
- Cumin
- Ginger
- Salt
To make the stuffing:
- 200g ground meat
- 1/2 onion, chopped
- 1 clove garlic, minced
- 2 tbsp parsley, chopped
- 1 tbsp oil
- Origano
- Curry
- Basil
- Red pepper
- Black pepper
- Cumin
- Ginger
- Salt
Directions
- Clean the squid : remove spine and outer skin, tentacles. Rinse well in cold water.
- The sauce : fry chopped onion in oil, add garlic, tomato puree and spices. Add about 2 glasses of hot water and let simmer on low heat.
- The filling : In a bowl, mix all ingredients and Stuff squid with mixture to 3/4 (Because it will shrink during cooking), and close opening with skewer or toothpick.
- Plunge stuffed squid into the sauce (add water as needed), cover and let it cook for 30 to 35 minutes, until the squid is tender.
- Serve warm and garnish with chopped parsley.
