Stuffed Squid

Ingredients

  • 4 squid

To make the sauce:

  • 3 tbsp oil
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp parsley, chopped
  • 1 bay leaf
  • 200g tomato puree
  • Origano
  • Curry
  • Basil
  • Red pepper
  • Black pepper
  • Cumin
  • Ginger
  • Salt

To make the stuffing:

  • 200g ground meat
  • 1/2 onion, chopped
  • 1 clove garlic, minced
  • 2 tbsp parsley, chopped
  • 1 tbsp oil
  • Origano
  • Curry
  • Basil
  • Red pepper
  • Black pepper
  • Cumin
  • Ginger
  • Salt

Directions

  1. Clean the squid : remove spine and outer skin, tentacles. Rinse well in cold water.
  2. The sauce : fry chopped onion in oil, add garlic, tomato puree and spices. Add about 2 glasses of hot water and let simmer on low heat.
  3. The filling : In a bowl, mix all ingredients and Stuff squid with mixture to 3/4 (Because it will shrink during cooking), and close opening with skewer or toothpick.
  4. Plunge stuffed squid into the sauce (add water as needed), cover and let it cook for 30 to 35 minutes, until the squid is tender.
  5. Serve warm and garnish with chopped parsley.
