Key Lime Pie

Key Lime Pie 

Ingredients

Crust:

  • 200g speculoos.
  • 60g melted butter.
  • 30g sugar.

Filling:

  • 4 egg yolks.
  • 1 can (397g) sweetened condensed milk.
  • 130 ml  lime juice.
  • 1 tbsp lime zest.

Topping:

  • Whipped cream.
  • Lime zest.

Directions

  1. Preheat oven to 350F (180C).
  2. Place speculoos into the bowl of a food processor and blend until crumbs form, then stir in sugar and butter. press mixture evenly onto the bottom and sides of glass pie plate. Bake for 8-10 minutes and let to cool to room temperature.
  3. In a large bowl, whisk egg yolks with lime zest until light yellow colored. Add condensed milk and lime juice and whisk again. Pour the mixture over the crust and bake for 15 minutes.
  4. Let pie cool at room temperature and then refrigerate for at least 3 hours.
  5. before serving, decorate the pie with cream and sprinkle with the lime zest.

Tips

  • The crust can also be made with digestive biscuits or graham crackers.
  • Key lime pie can be made with a meringue topping.
